Chocolate Chip Granola Bars

Chocolate Chip Granola BarsThis granola bar recipe is enough for one entire cookie sheet full. You could make half if you don’t have 3 kids eating you out of house and home. This recipe makes about 25 large bars or 50 small bars. I wrap them in brown paper snack bags and leave them in the pantry where the kids can easily get to them. So far they stay fresh for at least 10 days. I have made these with several diferent ingredients in place of the chocolate chips and walnuts. I have used coconut, pecans, cranberries, almonds, raisins etc. And sometimes I use whole wheat flour if I’m out of wheat germ.

4 cups rolled oats

1 1/2 cups brown sugar

1 cup wheat germ

1 1/2 tsp cinnamon

1 1/2 tspn salt

2 cups flour

1 cup honey

2 eggs

1 cup vegetable oil

4 tspns vanilla

1 cup chocolate chips

1 cup chopped walnuts

Mix all ingredients and press firmly onto a baking sheet. Bake at 350 for about 30-35 minutes. Cut into bars immediatelt after taking out of the oven while still hot. They will be too hard to cut if you wait. I cut them and let them cool in the pan.
